What Is Sushi Rice? A Preparation, Not a Variety

Sushi rice is not a variety of rice — it is a preparation method. Sushi rice is white rice — with one extra step. The base grain is ordinary polished short-grain japonica, identical to what you would serve as plain gohan alongside miso soup. The only difference is that sushi rice has been seasoned with sushi-zu (rice vinegar, sugar, salt) and fanned to body temperature after cooking.

There is no genetic, botanical, or milling difference. A bag labelled “sushi rice” and a bag labelled “Japanese short-grain rice” typically contain the same grain. The distinction is purely in the kitchen technique applied after the rice cooker finishes.

  • Ratio: 1 cup rice : 1.1 cups water (by volume)
  • By weight: 360 g rice : 396 ml water

Step 1 — Wash and soak the base rice

Rinse the rice in cold water 3-4 times until the water runs mostly clear. This removes surface starch that would otherwise make the finished sushi rice gummy. Soak for 30 minutes after washing — this allows the grain to hydrate evenly, producing a more uniform cook. Drain well before adding to the pot or rice cooker.

Step 2 — Cook at the right firmness

Step 3 — Season immediately at 90 degrees C

Transfer the just-cooked rice to a wide, flat-bottomed container — a hangiri (wooden sushi tub) is traditional, but a large glass or ceramic baking dish works. Pour the sushi-zu evenly over the rice while it is still very hot (around 90 degrees C). The heat opens the grain surface and allows the seasoning to absorb rather than sit on top. Step 4 — Fold, do not stir

Use a shamoji (rice paddle) with cutting and folding motions — slice through the rice at a 45-degree angle, then gently fold sections over each other. Never stir in circles. Circular stirring crushes the grains, releases excess starch, and produces gummy, paste-like rice instead of distinct, glossy grains.

Step 5 — Fan to body temperature

While folding, fan the rice with a flat fan (uchiwa) or a piece of cardboard. The rapid cooling serves two purposes: it evaporates excess surface moisture (creating the characteristic gloss) and it sets the starches so the grains become slightly firm on the outside while staying tender inside. Is calrose rice sushi rice?

Calrose is a medium-grain japonica rice developed at the University of California, Davis in 1948. It is the most widely available Japanese-style rice in the United States and accounts for the majority of California rice production. Calrose is not sushi rice by itself — it becomes sushi rice only after seasoning with sushi-zu, just like any other japonica variety.

That said, calrose is an excellent and practical base for home sushi. Its stickiness is slightly lower than true short-grain koshihikari, but more than sufficient for maki rolls, temaki hand rolls, and chirashi bowls. Can you use jasmine or basmati rice for sushi?

Short answer: no. Both jasmine and basmati are long-grain indica varieties. Their starch composition is fundamentally different from short-grain japonica — they are high in amylose (the linear starch that keeps grains separate) and low in amylopectin (the branched starch that creates stickiness).

The result: jasmine and basmati grains cook up fluffy and separate. When you try to press them into nigiri or roll them in nori, they fall apart. No amount of vinegar seasoning will fix the structural problem — the starch chemistry is wrong for sushi.

Common mistakes and how to fix them

Soggy, wet sushi rice

Cause: not fanning while folding. The moisture evaporation step is essential — without it, excess water stays on the grain surface and the rice feels wet rather than glossy. Fix: fan aggressively while folding. Work in a wide, shallow container so more surface area is exposed to air.

Vinegar flavour sitting on top, not in the grain

Cause: adding sushi-zu to rice that has cooled below 70 degrees C. The grain surface closes as temperature drops, preventing absorption. Mushy, paste-like texture

Rice too hard or crumbly when pressed

Cause: rice has gone cold. Sushi rice should be served at body temperature (~38 degrees C). Below that, the starches retrograde and the grains lose their ability to bond. Too much vinegar

Using the wrong water ratio
